This coffee is part of the Satus project in Pitalito, where Brayan works with dozens of producing families to refine processes and raise the quality in the region. Here, the focus is on the Bourbon Sidra variety and its unique character.
Fermentation takes place in the cherry for about two days, and drying is slow, controlled, and patient. An elegant coffee with a clear identity and natural balance.
